Potato Soup Tip
Slow and low is the way to cook your potato soup. Because of the high
starch content of potato soup you have to be careful not to burn it. If
you scorch the bottom of your potato soup it will have that burnt taste
all through the soup. So remember its a low and slow cooking technique
for that potato soup recipe.
1 onion - chopped
3 Tablespoons butter
5 potatoes
1 1/2 cup chicken broth
1/4 cup chopped fresh parsley
1/2 teaspoon ground thyme
1/4 teaspoon of celery seed
1 1/2 cups milk
2 Tablespoons of all-purpose flour
Dice your potatoes into about ½ cubes.
In your soup pot sauté the onions till they are clear and tender.
Add the potatoes, parsley, celery seed and chicken broth and simmer until the potatoes are soft. Remove about have of the potatoes and puree them and then add them back to the pot.
Add the milk and then stir in the flour slowly.
Now bring it up to a simmer and keep stirring till it thickens up. At this point it’s done but don’t burn it. The last thing is to Salt and pepper to taste
