Potato Soup Tip
Slow and low is the way to cook your potato soup. Because of the high
starch content of potato soup you have to be careful not to burn it. If
you scorch the bottom of your potato soup it will have that burnt taste
all through the soup. So remember its a low and slow cooking technique
for that potato soup recipe.
5 large potatoes
1 stick butter
3/4 cup of flour
1 3/4 quarts of milk
4 green onions
1 cup of sour cream
1/2 pound of bacon
10 ounces of shredded cheddar
Bake the potatoes till they are fork tender.
Cook and crumble the bacon and place it on a paper towel to remove any grease.
Chop up the green onions.
In you soup pot heat the butter and milk until the butter is melted. Do not bring to a boil..
When the butter is melted whisk in the flour slowly to prevent lumps.
Peel the potatoes if you like or not it’s a personal thing. If you are going to leave the skin on then cut the potatoes up and then mash them so that you don’t have one big potato skin in there.
Add the mashed potatoes , ½ of the bacon and ½ of the onions and heat till it is all hot. Garnish with a drab of sour cream and the reset of the onion and bacon.
